The Constant Companion – Bailey’s and Chocolate Chip Cupcakes

This is a little project that I have been working on the past few weeks and I am delighted to be writing the first post at last! I absolutely love baking and clothes so it is great to have a place to combine these two passions.
From the start I had a floral dress in mind that I want to base the first post around but as I am learning to master sugar craft flowers I instead offer you a recipe inspired by a bag that has been a constant companion all summer long!

photo 5 I picked up this bag last year on the sale rack in my local Primark for £2 (I love a bargain!) and I have gotten so much wear from it. Since I started working on Bake My Style I have been looking at clothes and accessories in a very different way and this bag just screams Bailey’s and chocolate chip due to its colour and pattern.

Bailey’s and Chocolate Chip Cupcakes

Preheat your oven to 180/160 fan

Ingredients:
100g softened butter
150g self raising flour
140g caster sugar
2 eggs
3 tablespoons of Bailey’s
A generous Handful of chocolate chips

Method:
Pop all the ingredients excluding the chocolate chips in the bowel and combine with an electric hand whisk. This will only work if the butter is soft enough! Next add in the chocolate chips and combine with a spoon. Divide the mixture into a cupcake tin lines with paper cases. The mixture should give you 10 to 12 cupcakes depending on how generously you fill them! Pop in the oven for 20/25 minutes. Test to see if they are baked by popping a metal skewer into a cupcake, if it comes out clean they are ready, if it comes out with some of the wet mix on it pop back into the oven for another few minutes. Leave to cool on a wire rack.

For the decoration you will need the following:
100g softened butter
250g icing sugar (sieved)
2 tablespoons of Baileys

Method:
Mix up the butter with the hand whisk and gradually add the icing sugar. Next mix in the Baileys.Spread the icing over the cooled cupcakes (ensure the cupcakes have cooled otherwise the icing will melt!) Finally decorate with chocolate chips .
