Malteaser Cupcakes

As I suspected, in the busy run up to Christmas my plan to bake the 12 cupcakes of Christmas hasn’t quite materialised! I hope you will be inspired to bake one of the 3 festive cupcake recipes I have shared with you! This recipe for Malteaser Cupcakes went down a treat when I made them for my colleagues, so much so that one of them has asked me a number of times as to when I was posting the recipe!!! Here it is at last Sam!!! 😊

Malteser cupcake recipe
100g soft unsalted butter
135g plain flour
150g caster sugar
10g cocoa
1 and a half packets (48g) of Horlicks Light Chocolate 
2 large eggs
3 tablespoons of milk
1 and a half teaspoons of baking powder

Icing
150g unsalted butter at room temperature
250g icing sugar
2 tablespoons milk
Half a sachet of Horlicks light chocolate
2 packs of Malteasers
Mini Merry-Teasers to decorate

Preheat your oven to 180 C / 160 C for a fan oven / gas mark 4. Prep a 12 hole muffin tin with some paper cases. Measure all your ingredients and pop into a large mixing bowl. Mix with an electric mixer until all the ingredients are combined and the batter is smooth. This will only work if the butter is soft and at room temperature! Spoon into the paper cakes and bake in for 20 minutes. Pop a metal skewer into the centre of the buns, if it comes out clean they are ready but if a bit of wet mix is on it keep them in for another few minutes. Pop the buns on a wire rack to cool.

Meanwhile prepare the icing. Whisk up the butter with your electric mixer and gradually add the icing bit by bit. Next add in the milk and Horlicks and mix in. Crush up the Malteasers and gently fold half into the icing. Pipe the icing onto the cooled cupcakes and sprinkle the remaining crushed Malteasers on top. Top with the mini Merry teasers if you have some to hand.
