Buttermilk Pancakes

The day that celebrates one of my favourite things to eat is nearly upon us! If you have been watching my Snapchat you will have seen that I’ve been having a bit of a pancake binge this weekend. Yesterday I made Darina Allen’s pancake recipe from her book Easy Entertaining and today I tried one of my own recipes and they came out really well so I’m going to share the recipe with you!

Makes 10 buttermilk pancakes

Buttermilk Pancakes – Ingredients 

250mls buttermilk
2 eggs
15g of melted butter
150g plain flour
1 and a half teaspoons of bicarbonate of soda
Pinch of salt
Extra butter for frying

Add the buttermilk and eggs to a big bowl and whisk lightly to break up the eggs. Add the melted butter and mix.

Sieve the plain flour, bicarb of soda and pinch of salt into the bowl and stir into the wet ingredients until incorporated.

Heat a crepe pan over a medium-high heat (or any non stick frying pan will do!). Melt a knob of butter in the pan and add a nearly full ice-cream scoop of batter in the one side of the pan and another scoop of batter to the other side of the pan.

Flip the pancakes when you see small bubbles starting to form on the top of the pancakes. It should take about a minute to cook each side. Pop the pancakes into a warm oven while you make the rest of the pancakes. The batter will make 10 pancakes to feed 2 to 3 people depending on how hungry you are!

Serve with maple syrup, strawberries and cream – delicious!
