Apple Muffins

I’m really excited to share this recipe with you…

I was inspired to create the recipe after seeing some delicious looking apple muffins at Borough Market. They got a really positive response when I brought some in for the gang at work so hope you will try them out and let me know what you think!


230g plain flour

2 and a half tsps baking powder

Half tsp salt

140g sugar

130g melted butter (unsalted is preferred)

1 egg

200mls milk

1 and a half apples, grated (I used Braeburn)

For the topping:

70g plain flour

50g chilled butter

30g caster sugar

A couple of handful of flaked almonds to finish


Preheat the oven to 170°C (fan oven)

Start with the crumble topping, pop the flour and sugar into a bowl and cut the butter into cubes before rubbing through the flour and sugar until it looks like course bread crumbs. Pop into the fridge to keep cool until later.

Next for the muffin mixture… Pop all the dry ingredients into a bowl and combine. In a separate bowl mix the milk and egg. Pop the grated apple into the milky liquid. Make a well in the middle of the dry ingredients and add the  milk, egg and Apple mix, also add the cooled melted butter and fold all the ingredients together- make sure to incorporate the flour at the  very bottom of the bowl and don’t over mix! 🙂

Line a muffins tray with muffin cases, the mix made enough for 8 muffin for me (I used 1 full ice cream scoop full of mix to fill each casing) Sprinkle a tablespoon of the crumble topping over each one. Finally sprinkle flaked almonds over each one before popping in the oven for between 30-35 minutes.

apple muffinsTo check if they are ready stick a skewer into the middle of one of the muffin, if it comes out dry and without any mix stuck to it then they are ready! Cool on a wire rack before eating with a nice hot cup of tea!
